Ingredients

  • 14 ounces shortcrust pastry
  • 1 egg yolk, beaten

Instructions

  1. Preheat your oven to 400 degrees F so it is fully hot by the time the pie goes in.
  2. Heat the oil in a deep skillet over medium-high heat, then add the ground beef and cook for 4 to 5 minutes, breaking it up with a wooden spoon, until it loses its pink color and starts to brown.
  3. Add the chopped onion and cook for 2 to 3 minutes until it begins to soften, then stir in the tomato paste and cook another 2 to 3 minutes so it deepens in flavor and loses its raw edge.
  4. Sprinkle in the flour and stir for 1 minute to coat the meat, which helps thicken the filling into a rich gravy rather than a watery mix.
  5. Add the chopped mushrooms, beef stock, and a couple of dashes of Worcestershire sauce, then bring to a boil.
  6. Reduce the heat to low, cover, and simmer for 20 minutes until the sauce is glossy and thick. Set aside to cool, then spoon into a 1-quart pie dish.
  7. Roll out the pastry on a floured surface until it is a little larger than the dish, then drape it over the top and press firmly around the rim to seal.
