Crispy Wrapped Cheese Sticks
Ingredients
- 1 cup all-purpose flour, plus more for dusting
- 1/2 cup whole milk
- 1 tablespoon butter, softened
- 1 large egg
- 2 pounds mozzarella (block, not fresh), cut into long strips
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1 teaspoon olive oil
- about 3 cups neutral oil, for frying
Equipment
- Mixing bowl
- Rolling pin
- Sharp knife
- Deep frying pan or heavy pot
- Slotted spoon or tongs
- Paper towels
- Thermometer (optional)
Instructions
- Cut the mozzarella into long strips about the thickness of your finger, then chill them in the fridge while you make the dough so they stay firm and do not turn soft (cold cheese melts more slowly, which keeps it from leaking out during frying).
- In a bowl, combine the flour, softened butter, and egg, then stir in the sugar, salt, and olive oil until the mixture looks crumbly and evenly moistened.
- Add the milk a little at a time, kneading as you go, until you have a smooth, soft dough that holds together and no longer sticks to your hands, about 3 to 4 minutes of kneading.
- Roll the dough out on a floured surface until it is about 1/8 inch thick, then cut it into long strips roughly 1 inch wide.
- Wrap each dough strip in a spiral around a chilled cheese strip, overlapping slightly so the cheese is fully covered with no gaps (any exposed cheese will melt out into the oil).
- Roll each wrapped stick lightly in flour to coat, which keeps them from sticking together and helps them crisp instead of clump in the pan.
- Heat about 2 inches of oil in a deep pan to 350 degrees F, or until a scrap of dough sizzles right away when dropped in.
- Fry the sticks a few at a time, turning as needed, until deep golden brown all over, about 2 to 3 minutes, then drain on paper towels and serve hot while the cheese is still stretchy.
Tips from the kitchen
- Use low-moisture block mozzarella, not fresh mozzarella packed in water, or the cheese will leak and spit in the oil.
- Keep the cheese cold right up until frying; a quick spell in the freezer helps the dough crisp before the cheese fully melts.
- Do not crowd the pan. Frying too many at once drops the oil temperature and leaves them greasy instead of crisp.

Make it your own
- Add a pinch of garlic powder or dried oregano to the dough for extra flavor.
- Serve with warm marinara or a spicy dipping sauce.
- Swap in a firm cheddar or a mild pepper jack for a different melt.
Storing & make-ahead
Best eaten fresh and hot. Store leftovers in the fridge up to 2 days and reheat in a 375 degree F oven or air fryer for 5 to 7 minutes to bring back the crunch. Avoid the microwave, which makes them soggy.
Good to know
- Why did my cheese leak out while frying?
- Usually the dough had a gap or the cheese was too warm. Wrap so the cheese is fully sealed and keep the strips well chilled before frying.
- Can I bake these instead?
- You can. Brush with oil and bake at 425 degrees F for about 12 to 15 minutes, though they will be less crisp than fried.
- What oil is best for frying?
- A neutral oil with a high smoke point, like vegetable, canola, or peanut oil, works best.
- Can I make them ahead?
- Assemble and flour the sticks, then refrigerate up to a few hours before frying. Fry just before serving for the best texture.
