Crock Pot Chicken Baked Tacos
Ingredients
- 4 to 6 boneless, skinless chicken breasts
- 1 bottle (about 16 oz) vinaigrette or Italian dressing
- 1 1/2 tablespoons ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 can (16 oz) refried beans
- 12 hard taco shells
- 2 cups shredded Mexican cheese blend
- 1 cup grape tomatoes, halved
- 1 jalapeno, seeded and sliced
- 1 avocado, peeled and sliced
- 2 tablespoons green salsa (salsa verde)
- 3 tablespoons sour cream
- 1 tablespoon milk
- 1/4 cup fresh cilantro, chopped
Equipment
- Slow cooker
- 9x13-inch glass baking dish
- Two forks for shredding
- Fine mesh strainer
- Squeeze bottles or zip-top bags
Instructions
- Place the raw chicken breasts in the bottom of your slow cooker and pour the entire bottle of vinaigrette over the top so every piece is coated.
- Sprinkle the cumin, smoked paprika, and garlic powder over the chicken, then stir gently with a spoon to work the spices into the dressing.
- Cover and cook on high for 4 hours, until the chicken is fully cooked and pulls apart easily with a fork.
- Lift the chicken out onto a plate and let it cool for a few minutes so it is easier to handle.
- Shred the chicken with two forks and move it to a glass bowl, then spoon most of the flavorful cooking liquid back over it so it stays moist and seasoned.
- Make the guacamole drizzle: blend the avocado and green salsa until smooth, press it through a fine strainer for a silky sauce, and transfer to a squeeze bottle (snip the tip wider if it clogs).
- Make the sour cream drizzle: stir the sour cream and milk together until thin and pourable, then transfer to a second squeeze bottle.
- Stand the taco shells up in a 9x13-inch glass baking dish. Fill each with a layer of refried beans, a scoop of chicken, and a generous pinch of shredded cheese.
- Bake at 450 degrees F for 10 to 15 minutes, just until the cheese is melted and bubbling and the shells are warm.
- Straight out of the oven, top the tacos with halved grape tomatoes, sliced jalapeno, and cilantro, then finish with a zigzag of the guacamole and sour cream sauces. Serve right away.
Tips from the kitchen
- Warm the refried beans slightly before filling so they spread easily and heat through evenly in the oven.
- Standing the shells upright in the dish keeps them from tipping and spilling while they bake.
- If you do not have squeeze bottles, use a zip-top bag with a corner snipped off for the drizzle sauces.

Make it your own
- Swap chicken breasts for boneless thighs for even juicier, richer meat.
- Use black beans instead of refried beans for a chunkier texture.
- Add a handful of shredded lettuce or pickled onions for extra crunch and tang.
Storing & make-ahead
Store leftover shredded chicken separately from the shells in an airtight container in the fridge for up to 4 days. Reheat the chicken with a splash of its liquid, then fill and bake fresh shells. Assembled baked tacos do not keep well since the shells soften.
Good to know
- Can I cook the chicken on low instead of high?
- Yes. Cook on low for 6 to 7 hours until the chicken shreds easily. High for 4 hours is the faster option.
- What kind of dressing works best?
- A zesty Italian or standard vinaigrette adds the most flavor. Anything oil-and-vinegar based keeps the chicken moist and tangy.
- Can I make this ahead?
- Absolutely. Cook and shred the chicken up to 3 days ahead, then assemble and bake the tacos just before serving.
- How do I keep the shells from breaking?
- Stand them upright and snug against each other in the baking dish so they support one another while filling and baking.
