Jamaican Brown Stew Chicken

This is comfort food with real backbone: chicken marinated in lime, thyme, and allspice, then browned and simmered in a rich coconut gravy until it falls off the bone. It takes a little time, but most of that is hands-off, and the payoff is a deeply savory one-pot dinner that tastes like it took all day.

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 tomato, chopped
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 1 red pepper, chopped
  • 1 carrot, chopped
  • 1 lime
  • 2 tsp dried thyme
  • 1 tsp ground allspice
  • 2 tbsp soy sauce
  • 2 tsp cornstarch
  • 2 cups coconut milk
  • 1 tbsp vegetable oil

Equipment

  • Dutch oven or heavy pot
  • large mixing bowl
  • tongs
  • whisk

Instructions

  1. Cut the lime in half and squeeze it all over the chicken, rubbing the juice into every piece to clean and freshen the meat, then pour off the excess juice.
  2. In a large bowl, combine the chicken with the tomato, onions, garlic, red pepper, thyme, allspice, and soy sauce, tossing so everything coats the pieces. Cover and marinate at least 1 hour in the fridge (longer is better) so the flavors soak in deep.
  3. Heat the oil in a Dutch oven or heavy pot over high heat until it shimmers. Lift each piece of chicken from the marinade, shaking off the loose vegetables and setting the marinade aside for the sauce.
  4. Brown the chicken in batches, a few pieces at a time, until each side is deep golden, about 3 to 4 minutes per side. Crowding the pan steams the meat instead of searing it, so give the pieces room. Set browned chicken on a plate.
  5. Pour off the excess oil, then return all the chicken to the pot. Add the reserved marinade and the carrot, stir, and cook over medium heat for 10 minutes so the vegetables soften and the base builds flavor.
  6. Whisk the cornstarch into the coconut milk until smooth, then stir it into the pot. Lower the heat to a gentle simmer and cook another 20 minutes, stirring now and then, until the gravy thickens and the chicken is tender and cooked through.

Tips from the kitchen

  • Marinate the chicken overnight if you can. The lime and thyme go further with more time, and the finished stew tastes noticeably richer.
  • Get the oil truly hot before browning. A proper sear locks in flavor and gives the gravy its deep brown color.
  • If the sauce looks thin at the end, simmer uncovered for a few extra minutes, or whisk in a little more cornstarch slurry.

Make it your own

  • Add a chopped Scotch bonnet or a splash of hot sauce for authentic island heat.
  • Swap in bone-in chicken thighs for extra-tender, budget-friendly meat.
  • Toss in diced potato with the carrot to stretch it into a heartier stew.

Storing & make-ahead

Cool completely, then refrigerate in an airtight container up to 4 days. Reheat gently on the stove with a splash of water or coconut milk to loosen the gravy. It also freezes well for up to 3 months.

Good to know

What should I serve with brown stew chicken?
Steamed white rice or rice and peas is traditional and soaks up the gravy beautifully. Fried plantains or a simple green salad round it out.
Can I use chicken pieces instead of a whole bird?
Yes. Bone-in thighs and drumsticks work great and stay juicy through the long simmer. Adjust cook time so the meat reaches 165F.
My gravy is too thin. How do I fix it?
Simmer uncovered a few more minutes, or whisk a teaspoon of cornstarch into a little cold water and stir it in until thickened.
Is this dish spicy?
As written it is savory, not hot. Add Scotch bonnet or your favorite chili if you want the classic Jamaican kick.
