- 2 Scotch bonnet peppers, chopped
- 1 tablespoon all-purpose seasoning
- 2 teaspoons ground annatto

Instructions
- In a medium bowl, toss the shrimp with the chopped Scotch bonnets, all-purpose seasoning, ground annatto, and ground allspice until every piece is evenly coated, then let it marinate for 10 minutes so the spices sink in.
- Heat a large pan over medium heat and pour in the shrimp stock, bringing it to a gentle simmer. Stir in the diced onion and minced garlic and cook until soft and fragrant, about 2 minutes, so they sweeten the sauce.
- Add the seasoned shrimp and thyme sprigs, spreading the shrimp in a single layer. Cover and cook 5 to 7 minutes, stirring now and then, until the shrimp turn bright pink and are opaque all the way through.
