Ingredients

  • 1 1/2 tablespoons unflavored gelatin
  • 1/4 cup room-temperature water
  • about 1/2 cup (from fresh or frozen) passion fruit pulp
  • 1 cup granulated sugar
  • 1 can (14 ounces) sweetened condensed milk
  • 6 large egg whites
  • 1 sprig, for garnish fresh mint

Equipment

  • Medium saucepan
  • Electric mixer
  • Mixing bowls
  • Rubber spatula
  • Clear glass serving cups

Instructions

  1. Stir the gelatin into 1/4 cup room-temperature water in a small bowl and let it sit until softened and spongy, about 5 minutes, so it dissolves smoothly later.
  2. In a medium saucepan over medium-high heat, combine the passion fruit pulp, sugar, and softened gelatin. Cook, stirring often, until everything is smooth and fully blended, but do not let it come to a boil or you risk weakening the gelatin's set.
  3. Take the pan off the heat and let the mixture cool completely to room temperature, then stir in the condensed milk until silky and even.
  4. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form, meaning the peaks stand tall and the whites stay put when you tilt the bowl. Any grease will keep them from whipping, so start clean.
  5. Stir about one-third of the whites into the passion fruit base to loosen it, then gently fold in the rest with a spatula until just combined, keeping as much air in as possible for that light texture.
  6. Divide the mousse among clear glass cups, cover, and refrigerate until well chilled and set, at least 2 hours. Serve cold, topped with a little fresh mint.

Tips from the kitchen

  • Let the passion fruit base cool fully before folding in the whites, or the heat will deflate them.
  • Use a spotlessly clean, grease-free bowl for the egg whites so they whip to full volume.
  • If you only have frozen passion fruit pulp, thaw it fully and stir well before measuring.

Make it your own

  • Swap passion fruit for mango or guava pulp for a different tropical spin.
  • Add a spoonful of whipped cream on top for extra richness.
  • Layer with crushed graham crackers for a parfait-style dessert.

Storing & make-ahead

Keep covered in the refrigerator for up to 3 days. This dessert is best made ahead and is not suited to freezing, since the texture turns icy.

Good to know

Can I use raw egg whites safely?
If you are concerned, use pasteurized egg whites (sold in cartons), which whip up just fine and remove any raw egg worry.
Why won't my mousse set?
Usually the gelatin was boiled or not fully dissolved, or the base was too warm when the whites were folded in. Keep it below a boil and cool it completely.
Where do I find passion fruit pulp?
Look for frozen tropical fruit pulp in the freezer aisle of many grocery stores, or scoop it fresh from ripe passion fruit.
Can I make this a day ahead?
Yes, it actually improves with a longer chill. Make it the day before and garnish with mint just before serving.
