Quinoa and Black Bean Stuffed Bell Peppers
Ingredients
- 4 green bell peppers, halved and seeded
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup (dry, about 3 cups cooked) quinoa, cooked
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- to taste salt
- to taste black pepper
- 1 1/2 cups shredded Mexican cheese blend
- for garnish fresh cilantro, chopped
Equipment
- 9x13-inch baking dish
- large skillet
- cutting board and knife
- measuring cups and spoons
Instructions
- Heat your oven to 375°F and lightly grease a 9x13-inch baking dish so the peppers release easily later.
- Set the halved bell peppers cut side up in the dish and bake for 15 to 20 minutes, until they soften slightly. Pre-roasting means they finish tender, not crunchy.
- While the peppers roast, warm the olive oil in a large skillet over medium heat. Add the onion and cook for 3 to 4 minutes, stirring now and then, until soft and translucent so the filling tastes sweet, not sharp.
- Stir in the garlic and cook about 1 minute, just until fragrant. Watch it closely, since garlic burns fast and turns bitter.
- Add the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, smoked paprika, and a few pinches of salt and pepper. Cook 5 to 7 minutes, stirring, until everything is heated through and the flavors blend.
- Pull the skillet off the heat and stir in 1 cup of the shredded cheese so it melts into the warm filling and holds it together.
- Spoon the filling into the roasted pepper halves, mounding it slightly, then top each with the remaining 1/2 cup cheese.
- Return the peppers to the oven and bake 15 to 20 minutes, until the cheese is melted and bubbly and the peppers are fork-tender.
- Let the peppers rest 5 minutes so the filling sets, then scatter chopped cilantro over the top and serve.
Tips from the kitchen
- Cook the quinoa ahead of time or use leftover quinoa to shave 15 minutes off the process.
- Mound the filling generously; it holds together better than a loose spoonful and looks great on the plate.
- If your peppers tip over, slice a thin sliver off the rounded bottoms to help them sit flat.

Make it your own
- Swap in red or yellow bell peppers for a sweeter, milder bite.
- Use brown rice or cauliflower rice in place of quinoa.
- Make it vegan by using your favorite dairy-free shredded cheese.
Storing & make-ahead
Store cooled stuffed peppers in an airtight container in the fridge for up to 4 days. Reheat in a 350°F oven for about 15 minutes or microwave individual peppers for 2 to 3 minutes. You can assemble them a day ahead and bake just before serving.
Good to know
- Do I need to cook the quinoa first?
- Yes. The quinoa should be fully cooked before it goes into the filling, since the short bake time will not cook raw grains through.
- Can I freeze these?
- Absolutely. Freeze baked, cooled peppers in a single layer, then store up to 3 months. Thaw overnight in the fridge and reheat in the oven.
- How do I keep the peppers from getting watery?
- Drain the diced tomatoes well and rinse the black beans. Pre-roasting the peppers also releases excess moisture before stuffing.
- Can I add meat?
- Sure. Stir in a cup of cooked ground beef or turkey with the filling, and reduce the beans slightly to keep the balance.
