Ingredients
- 8 bone-in chicken thighs
- 1 tsp ground cumin
- 1/2 tsp paprika
- 2 tbsp olive oil
- 6 rounds pita bread
- 2/3 cup chicken stock
- 1 1/2 cups walnuts
- 1 onion, chopped
- 2 cloves garlic, chopped
- 3 tbsp light cream
- 1 lemon, juiced
- a handful fresh cilantro

Instructions
- Heat your oven to 400 degrees F. In a roasting pan, toss the chicken thighs with the cumin, paprika, 1 tablespoon of the olive oil, and a good pinch of salt and pepper until evenly coated.
- Roast the chicken for about 40 minutes, until the skin is crisp and golden and the juices run clear when pierced near the bone.
- While the chicken roasts, tear up 1 pita and drop the pieces into a small bowl. Pour over a couple tablespoons of the chicken stock and let it soak so it softens into the sauce.
