Sesame Cucumber Salad
Ingredients
- 2 medium cucumbers
- 1/2 teaspoon salt
- 2 teaspoons toasted sesame oil
- 2 tablespoons rice vinegar
- 6 fresh basil leaves
- 1/2 teaspoon red chili flakes
- 2 teaspoons sesame seeds

Instructions
- Peel the cucumbers, then slice each one lengthwise into quarters so you have long spears. If the seeds taste bitter, run a spoon down the center of each spear and scrape them out, since bitter seeds can throw off the whole salad.
- Cut the spears crosswise into 1/2-inch pieces and add them to a serving bowl. Bite-size chunks hold the dressing better than long slices.
- Sprinkle the cucumbers with the salt and toss so every piece is lightly coated. This draws out a little water and seasons the cucumbers from the start.
- Add the sesame oil, rice vinegar, torn basil leaves, and chili flakes, then toss until everything is glossy and evenly coated, about 30 seconds.
