EveryDayMeal recipe
Turkish Lamb Pilau
Ingredients
- 1/4 cup pine nuts (or slivered almonds)
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cinnamon sticks
- 1 pound boneless lamb, cut into bite-size pieces
- 1 1/4 cups basmati rice
- 1 lamb or beef stock cube
- 2 cups boiling water
- 12 dried apricots
- small handful fresh mint, chopped
Equipment
- Large deep skillet or wide pan with lid
- Cutting board
- Sharp knife
- Measuring cups
Instructions
- Set a large, deep skillet or wide pan over medium heat and add the pine nuts (no oil). Toast them, shaking the pan often, until golden and fragrant, about 3 minutes, then tip them onto a plate so they do not scorch.
- Add the olive oil to the same pan, then stir in the chopped onion and cinnamon sticks. Cook until the onion turns soft and golden at the edges, about 6 minutes, which builds the sweet, spiced base of the dish.
- Turn the heat up and add the lamb. Cook, stirring, until the pieces lose their pink color and brown lightly, about 5 minutes, so the meat tastes rich rather than steamed.
- Add the basmati rice and stir constantly for 1 minute, coating every grain in the oil so the finished rice stays separate and fluffy.
- Pour in 2 cups boiling water, crumble in the stock cube, and add the dried apricots. Season with salt and pepper to taste and give it one good stir.
- Lower the heat, cover tightly, and simmer gently for 12 minutes, until the rice is tender and the liquid has been absorbed. Resist lifting the lid so the steam stays in.
- Fluff the rice with a fork, then scatter the toasted pine nuts and chopped mint over the top. Serve warm straight from the pan.
Tips from the kitchen
- Rinse the basmati under cold water until it runs clear before cooking for lighter, fluffier grains.
- Let the pan rest covered off the heat for 5 minutes after cooking, then fluff. This finishes the rice without any gummy bottom.
- Toast the pine nuts carefully. They go from golden to burnt fast, so keep them moving and pull them the moment they color.

Make it your own
- Swap the lamb for ground lamb or diced chicken thighs if that is what you have.
- Use golden raisins or chopped dates in place of apricots for a different sweetness.
- Stir in a handful of fresh spinach during the last few minutes for extra greens.
Storing & make-ahead
Cool leftovers and refrigerate in an airtight container for up to 3 days. Reheat in a covered pan or microwave with a splash of water to keep the rice from drying out. Freezes well for up to 2 months.
Good to know
- Can I use brown rice instead of basmati?
- You can, but brown rice needs more liquid and a longer simmer, around 40 to 45 minutes. Add an extra 1/2 cup water and check for tenderness.
- What cut of lamb works best?
- Boneless leg or shoulder cut into bite-size pieces is ideal. Both stay tender with this quick cook time.
- My rice came out mushy. What went wrong?
- Usually too much liquid or lifting the lid too soon. Measure the water carefully and keep it covered during the full simmer.
- Can I make this ahead?
- Yes. Cook it fully, cool, and refrigerate. Reheat gently with a splash of water and add fresh mint and pine nuts just before serving.
