Ingredients

  • about 3/4 cup dried apricots
  • 1/3 cup golden (light) raisins
  • 3/4 cup dark raisins
  • 1/2 cup walnuts
  • 1/3 cup almonds
  • 1/3 cup shelled pistachios
  • 1/3 cup dried cherries
  • 1 splash (about 1 teaspoon) rose water

Instructions

  1. Rinse the dried apricots and both kinds of raisins under cool water, then place them in a bowl and cover with cold water so the liquid sits about 2 inches above the fruit. This is what slowly plumps the fruit and creates the syrupy juice later.
  2. Put the walnuts, almonds, and pistachios in a separate heatproof bowl and pour boiling water over them. Let them soak until the skins loosen, then slip off and discard the skins with your fingers. It is a little fiddly, but peeling gives you a smoother, sweeter bite. Drain and toss out that soaking water.
  3. Combine the soaked fruit (along with its soaking liquid) with the peeled nuts and the dried cherries in a large bowl, so the flavors can mingle and share their juices.
  4. Add the splash of rose water, stir gently, then cover and refrigerate for two days. As it rests, the liquid deepens into a sweet, syrupy juice that gives Haft Mewa its signature texture.
  5. Spoon the fruit, nuts, and plenty of the syrup into individual bowls or cups and serve chilled.
