Ingredients

  • 6 cups all-purpose flour
  • 6 large eggs
  • 2 1/2 tablespoons baking powder
  • 1 cup (2 sticks) melted butter
  • 1 tablespoon salt
  • 1 cup milk
  • 1 cup granulated sugar
  • 1 tablespoon ground mahleb
  • 1 egg (for glaze)
  • 2 teaspoons, divided black nigella seeds (sev dzandig)

Equipment

  • Large mixing bowls
  • Sifter or fine mesh strainer
  • Rolling pin
  • Two baking sheets
  • Parchment paper
  • Pastry brush
  • Wire cooling rack

Instructions

  1. Preheat your oven to 400 degrees F and line two baking sheets with parchment paper so the pastries release cleanly.
  2. In a large bowl, sift together the flour, baking powder, salt, and sugar until evenly combined, which helps the pastries rise uniformly.
  3. In a separate bowl, beat 6 eggs until smooth, then whisk in the melted butter and milk to make your wet mixture.
  4. Sprinkle 1 teaspoon of nigella seeds and all of the mahleb over the dry ingredients so the spice is distributed throughout the dough.
  5. Make a well in the center of the dry ingredients and pour in the wet mixture all at once, stirring with just a few strokes until a shaggy dough forms.
  6. Turn the dough onto a floured board and add a little more flour if it feels too sticky; you want it soft but manageable, not wet.
  7. Knead gently just a few times, then roll the dough out to about 1/2 inch thick so the pastries stay tender and slightly puffy.
  8. Cut into diamonds, circles, or long strips that you can braid into small loaves, then prick each piece several times with a fork to keep them from puffing unevenly.
  9. Beat the remaining egg with the last teaspoon of nigella seeds, then brush this glaze over each piece for a shiny, golden finish.
  10. Arrange the pastries on the prepared sheets and bake for 12 to 15 minutes, until lightly golden on top.
  11. Cool on a wire rack, but serve warm for the best flavor and texture.

Tips from the kitchen

  • Mahleb has a distinct almond-cherry flavor, so measure it exactly; too much can turn bitter.
  • Do not overwork the dough after adding the wet ingredients or the pastries will turn tough.
  • Roll evenly to 1/2 inch so every piece bakes in the same amount of time.

Make it your own

  • No mahleb on hand? Use 1/2 teaspoon almond extract for a similar aroma.
  • Skip the sugar for a more savory pastry to serve with cheese.
  • Brush with a little honey after baking for extra sweetness.

Storing & make-ahead

Store cooled pastries in an airtight container at room temperature for up to 3 days. Reheat wrapped in foil in a 300 degree F oven until warm. They also freeze well for up to 2 months.

Good to know

Where can I find mahleb?
Look in Middle Eastern or Armenian grocery stores, or order it online. It is sold ground or whole.
What are sev dzandig seeds?
They are nigella (black) seeds, which add a mild, nutty, slightly peppery flavor and a pretty speckled look on top.
Can I make the dough ahead?
Yes, wrap it tightly and refrigerate for up to a day. Let it sit at room temperature briefly before rolling.
Why are mine tough?
Overmixing or overkneading develops too much gluten. Mix just until combined and knead only a few times.
