Ingredients

  • 1 large red chile, divided
  • 1 inch piece fresh ginger, peeled
  • 1 large garlic clove
  • 1 small bunch fresh cilantro (stems and leaves)
  • 1 tablespoon sunflower or vegetable oil
  • 4 boneless skinless chicken breasts, cut into chunks
  • 5 tablespoons creamy peanut butter
  • 2/3 cup chicken stock
  • 3/4 cup plain Greek yogurt

Instructions

  1. Thinly slice about a quarter of the red chile and set it aside for garnish. Add the rest of the chile to a food processor along with the ginger, garlic, cilantro stems, and about a third of the cilantro leaves.
  2. Blitz the mixture into a rough paste, adding a splash of water if it needs help coming together. This becomes the flavor base for the whole curry.
  3. Heat the oil in a large skillet over medium-high heat. Add the chicken chunks and brown them for about 1 minute, just to get some color on the outside (they will finish cooking in the sauce).
  4. Stir in the paste and cook for 1 minute more, until it smells fragrant and the raw garlic edge softens.
  5. Add the peanut butter, chicken stock, and Greek yogurt. Stir until smooth and the peanut butter melts into a silky sauce.
  6. Once the sauce is gently bubbling, simmer for about 10 minutes, stirring now and then, until the chicken is cooked through and the sauce has thickened enough to coat the back of a spoon.
  7. Stir in most of the remaining cilantro leaves, then scatter the rest on top along with the sliced chile. Serve over rice or mashed sweet potato.
